Pumpkin Peanut Butter Choc Bites
 

These little balls are a delicious treat to have on hand. The textures of smooth pumpkin, earthy peanut butter and crunchy chocolate chips make this a winner combo! Great to freeze too!

Ingredients:

  • ¾ can of pumpkin puree

  • ¾ cup Peanut butter ( or almond)

  • 3 Tbsp Maple syrup ( or agave)

  • ¼ tsp of cinnamon

  • 2 cups of oats/ quick oats

  • ½ cup mini vegan chocolate chips

  • pinch of salt

Directions:

  1. Mix all ingredients in a lg bowl and make into small balls.

  2. Freeze for 1 hour on a cookie sheet lined w/ parchment paper

  3. Transfer into a ziplock back to freezer or keep in fridge.

INGREDIENTS:

  • 2 cloves garlic, peeled and roughly chopped

  • 1 can chickpeas/garbanzo beans, drained

  • 2 tablespoons tahini

  • 3/4 cup pumpkin puree

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon smoked paprika

  • 1/2-1 teaspoon of honey

  • 1/2 teaspoon sea salt

  • 1 tablespoon chopped fresh sage

  • 1-2 tablespoons extra virgin olive oil

DIRECTIONS

  1. Pulse garlic in a food processor until finely chopped.

  2. Add chickpeas, tahini, pumpkin, spices, honey, salt and sage.

  3. Process until smooth.

  4. Taste and add another pinch of salt and adjust spices if desired.

  5. Drizzle some honey on top w/ some roasted pumpkin seeds ( optional)

  6. Store in the refrigerator.
